Fruity Pebbles Confetti Ice Cream Squares

We eat ice cream almost every day in our home; we do live on a dairy after all! These Fruity Pebble Confetti Ice Cream Squares were a huge hit with my ice cream loving family! In fact, I think it’s my new favorite way to serve ice cream, no last minute ice cream scooper involved!

We are serious ice cream snobs at our house. We love our ice cream, but only the good brands. A local ice cream shop sells the best ice cream and needless to say, we are hooked. I have a few relatives that come to visit primarily because they love the ice cream. Some of them even sneak a bowl, or two, in for breakfast. I’m not judging them. We may have created the ice cream breakfast at our house and convinced ourselves it’s okay because it resembles drinking milk!

When Post contacted me and asked me if I would like to review one of their recipes I couldn’t wait to try the Fruity Pebbles Confetti Ice Cream Squares. You already know that we love ice cream. What I didn’t tell you is how much my boys love cold cereal. They beg me to eat the Cocoa Pebbles and Fruity Pebbles and I always tell them no because I’m saving them to make crispy treats out of them. Dad lets them have as many as they want and then buys more! Anyway, when I saw Post mixed ice cream and Fruity Pebbles together I knew it was going to be a winner with my family!

The crust of the squares is basically a cookie dough crust filled with Fruity Pebbles. Crunchy Fruity Pebbles automatically make the dough more festive and fun!

My little helper couldn’t wait for his chance to lick the bowl clean. Two thumbs up for the cookie dough base!

Seriously, the hardest part of these bars is the waiting time. You have to wait for the cookie dough base to cool. Top it with softened ice cream. Sprinkle Fruity Pebbles on top, I used way more than the recipe called for because it just seemed like the right thing to do! Stick the whole thing in the freezer and wait for it to set up. I told you the waiting was hard!

Now this is my favorite part about these squares. Take them about of the freezer a few minutes before you want to serve them. Cut them in squares and serve! If you have ever been the designated ice cream scooper at a party, you will appreciate the ice cream being cut in square too!
