The idea of the McGriddle is such a great savory, high-protein breakfast option. Instead of dismissing it entirely, I decided to make a homemade version.
This Copy Cat Sausage McGriddle recipe is a homemade version of the classic McDonalds Sausage and Egg McGriddle. This savory breakfast sandwich consists of egg and sausage between two pancakes, topped with maple syrup.

What ingredients do I need for this recipe?
This savory breakfast sandwich is packed with protein! The sausage mcgriddle recipe calls for protein pancakes, sausage, and eggs, all of which will create a delicious and easy on-the-go option.
Here’s what you’ll need:
- Kodiak Cakes Power Cakes Mix – Kodiak Cakes is the only pancake mix I ever use. I love the flavor, the nutritional components, and how easy it is to make. I use the classic Buttermilk flavor for this recipe.
- Water – This will be mixed with the Kodiak Cakes mix to make the pancake batter.
- Eggs – You’ll use eggs to scramble, fry, or make egg patties for your breakfast sandwich.
- Breakfast sausage – We like to use a spicy breakfast sausage in our home! We use a tube of sausage and then form the patties ourselves, but you could opt for pre-made patties.
- Cheese – The standard McDonalds McGriddle uses American Cheese, but we prefer any other kind of cheese in our home.
- Maple Syrup – I use a classic and pure maple syrup because it is packed with flavor.
- Salt and Pepper – These ingredients are added to taste.
What substitutions can I make?
The beauty of this sausage mcgriddle recipe is that you can totally modify it to your dietary restrictions and preferences.
Here’s a few substitution ideas:
- Pancakes – I like to use Kodiak Cakes pancake mix, but you can use whatever kind of pancake mix you like best. You can even make pancakes from scratch!
- Eggs – I switch it up between scrambling eggs, cooking patties, and even frying eggs. In addition to cooking eggs using varying methods, you can also use egg whites! Eggs will provide protein and fats, while egg whites will be mostly protein.
- Breakfast sausage – I use a spicy breakfast sausage because that is Alan’s favorite (and we eat our meals together), but you can use any kind of breakfast sausage. You can use frozen patties, pre-made patties, or form your own. You can even use turkey sausage, pork sausage, or a meat-free sausage to make these meet your dietary needs.
- Cheese – The standard McDonalds recipe calls for American cheese, but I like to use pepper jack or sharp cheddar. You can use your favorite kind of cheese or leave off the cheese completely.
- Syrup – This isn’t necessary and can just be added if you like it! Pour it straight onto the sandwich, dunk it, and use as much as is satisfying to you.
For a High-Protein Version:
This recipe is already high-protein because of the pancake mix, eggs, and sausage.
However, there are some substitutions that can make this recipe have less carbs, less fats and more protein!

For a really high-protein version, use Kodiak Cakes for pancakes, egg whites instead of eggs, and turkey sausage instead of pork sausage!
What equipment will I need to make this recipe?
All of this can be made right on your stovetop. Here’s what you’ll need:
- Skillet – You’ll need at least one, but if you have two you can cook faster!
- Spatula – To flip the pancakes, scramble the eggs, and flip the sausage.
- Bowls – One to scramble the eggs and one to mix the pancake batter.
How to make a McGriddle?
Here’s how to make your own sausage mcgriddle:
- Gather all the ingredients.
- Heat up a skillet. When the skillet is hot, coat with cooking spray or oil.
- Mix 1 cup of Kodiak Cakes mix with 1 cup of water. Add additional pancake mix or water until the batter is the correct consistency (a thicker consistency is best for a more supportive McGriddle).
- Scoop the batter into 3-4 inch pancakes on the skillet. Cook pancakes until there are bubbles on one side, then flip and cook an additional minute or until brown. Repeat this process until all pancakes are made, spraying cooking oil in between each round.
- To make the sausages, open the tube of breakfast sausage and form 6 patties. Sprinkle the patties with salt and pepper if desired.
- Add the formed sausage patties onto a hot skillet. Cook until the internal temperature of the patties reaches 160 degrees or until brown.
- If you would like cheese on your sandwich, add a slice on top of the sausage patty when it is almost done cooking so it can melt on the patty.
- To make the eggs, crack the eggs into a mixing bowl. Use a whisk or a fork to beat the eggs until everything is combined. Add milk if desired.
- Use a hot skillet to cook the eggs. Either pour all of the egg mixture onto a skillet and use a spatula to scramble the eggs OR pour the eggs into a skillet and cook completely as an omelette. The eggs will stay on the sandwich better if cooked as a “patty”; however they can be scrambled and it still works.
- Once the pancakes, sausages, and eggs are cooked, begin assembling the sandwiches.
- Lay down pancake pairs on plates. Add a sausage patty and cheese to one of the pancakes and eggs to the other. Put all components together to make a sandwich. Repeat this process until all sandwiches are made.
- Drizzle with maple syrup, if desired.

How can I store these?
Any of the leftovers can be stored in an airtight container in the fridge for 4-5 days. Avoid adding the syrup until you’re ready to eat again so the pancakes do not get soggy.
How can I reheat these?
Microwave on high for 1-2 minutes or until heated. If you prefer to use an oven, bake at 350 for about 15 minutes.
