Campfire cooking is so much more than roasting marshmallows (perfect moment as that is). The following recipes are true showstoppers and definitely worth planning a trip around. We’re sharing a big batch cocktail perfect for a large gathering, a ridiculously easy entrée, and a decadent fruity dessert.

Smoky & Sparkly Pineapple Big Batch Cocktail (Serves 8-10)

Drinking this cocktail is like taking a sip of a literal campfire in the best way possible. Charred pineapple infuses the already-smoky mezcal with fruity sweetness, lime juice adds refreshing tartness, and seltzer adds some sparkle. Sweeten with agave to taste, and, if you’d like, add herby freshness in the form of a big handful of fresh mint or cilantro. This is the perfect party-friendly cocktail.

Tools/Ingredients:

  • Campfire Grill Grate
  • Big Pitcher
  • 1 Pineapple, peeled, cored, and cut into 1” slices 2 Cups Mezcal
  • ½ Cup Freshly Squeezed Lime Juice
  • ⅓ Cup Agave Syrup, or more to taste
  • Seltzer
  • Optional: Fresh Mint or Cilantro

Recipe:

Prepare a grate placed over a campfire. Grill pineapple until lightly charred and caramelized, 3-5 minutes per side (depending on the strength of your flames!). Save a few extra-pretty pieces for garnish, then transfer remaining to a big pitcher. Cover grilled pineapple with mezcal. Let sit, stirring occasionally, for at least 30 minutes (or up to overnight in the fridge) to infuse. If using, add mint or cilantro now, too. When you’re ready to serve, pour in lime juice and agave; mix to thoroughly combine. (Taste and add more agave if desired!) Divide between ice-filled glasses, top off with seltzer, garnish with reserved grilled pineapple, and serve.

Shrimp Scampi Foil Packet (Serves 4)

Is there anything better than a foil packet meal? It’s like a magical vessel that transforms raw ingredients into something other-worldly. This classic shrimp scampi is no exception. Plus, the campfire flames make it that much more fun (and delicious). Serve with crusty bread on the side for dunking, or bring ’em inside and spoon over al dente pasta. You can’t go wrong. Tools/Ingredients:

  • Campfire Grill Grate
  • Aluminum Foil
  • 20 oz Shrimp (from our Market!)
  • 6 TBSP Butter, diced
  • 5 Cloves Garlic, minced
  • Juice and Zest from 1 Lemon
  • ½ Cup White Wine or Rosé
  • Kosher Salt
  • Pinch of Chili Flakes
  • Handful of Roughly Chopped Fresh Parsley

Recipe:

Prepare a grate placed over a campfire. Measure out 4, foot-long sheets of foil. Divide shrimp between one half of each piece of foil. Evenly dot with butter, sprinkle with garlic and lemon zest, and drizzle with lemon juice and wine. Season with salt and pepper. Fold the empty foil over the shrimp mixture crosswise to completely cover. Roll the top and bottom edges to seal them closed. Grill until shrimp is cooked through and mixture is saucy, about 10 minutes (depending on the strength of your flames!). Carefully open packets and top with parsley. Grill up some crusty bread and dunk away.

Campfire Fruit Crisp (Serves 4)

It’s true, you can bake over a campfire! (So why just settle for s’mores?) This crisp is so versatile and perfect for camping year-round—almost any in-season fruit will do. Think: Apples and cranberries in the fall, pears in the winter, strawberries and rhubarb in the spring, and peaches or blueberries (or a mix!) in the summer. One thing to note: This dessert shouldn’t be cooked over roaring flames! More like a lazily crackling fire with lots of orange-glowing coals. Plus, a scoop of vanilla ice cream never hurt.

Tools:

  • Campfire Grill Grate
  • Butter, for greasing
  • Large Cast Iron Skillet

Filling:

  • 6 Cups Any In-Season Diced Fruit or Whole Berries
  • ⅔ Cup Granulated Sugar
  • 1 TBSP Lemon Juice
  • 2 TBSP Cornstarch or Flour
  • Pinch of Kosher Salt

Topping:

  • ½ Cup Flour
  • ½ Cup Rolled Oats
  • ½ Cup Brown Sugar, packed
  • Pinch of Cinnamon
  • Pinch of Kosher Salt
  • ½ Cup (1 stick) Butter, melted

Recipe:

Prepare a grate placed over a campfire. Butter your cast-iron skillet. In a large bowl, toss together filling ingredients until thoroughly combined, then transfer to prepared skillet. In a medium bowl, combine topping ingredients until evenly mixed. Crumble over the fruit filling, squeezing bits of the topping together into large clumps as you go. Cover skillet with a lid or with foil. Place over the grill and cook until fruit is softened, saucy, and thickened, and topping is cooked through, about 25 minutes.
