A few months ago I posted my rainbow sandwich recipe. I had a lot of positive feedback on that recipe, and quite a few requests for more vegan sandwich recipes. That’s why I’m excited to share this Panera Mediterranean veggie sandwich recipe with you.
Fresh tomatoes are the heart and soul of this veggie sandwich! I like to use heirloom tomatoes, but any variety will do, as long as they’re fresh and ripe. When tomatoes are in season, I can’t get enough of them. When they’re at their ripest and juiciest, they’re wonderful in omlettes, salads, and wraps. But, this sandwich is my new favorite way to enjoy them.

Ingredients
- Bread: Panera uses tomato basil bread on their Mediterranean veggie sandwich. It’s not vegan, and difficult to find such a particular artisan bread on the shelves of your local grocery store. So, feel free to use whatever bread you prefer. I’ve made this sandwich with whole wheat bread and sourdough. Both were delicious. You can also make this veggie sandwich gluten free by simply using your favorite gluten free bread. I love Food For Life’s Sprouted Bread. - Hummus: Hummus is the creamy base of the Panera Mediterranean veggie sandwich. Get your favorite brand, or make your own hummus at home. It’s easier than it looks.
- Feta: I used Violife Greek Cheese. It’s my favorite vegan feta. Having said that, if you can’t find vegan feta (frequently called vegan Greek cheese), your sandwich will still be delicious without it. While I love the salty taste of feta in this recipe, I have also used cream cheese. You could try my vegan cream cheese recipe for a perfectly creamy spreadable cheese that’s awesome on sandwiches.
- Tomatoes: Heirloom tomatoes are my favorite variety. They have the perfect balance of acid and sugar when in season. I like to get mine from the local farmer’s market.
- Cucumber: Choose a fresh garden cucumber.
- Roasted Red Peppers: Panera uses Peppadew roasted red peppers, but any roasted red peppers will do. I used pepper drops, which have a spicy sweet flavor and are smaller than traditional roasted red peppers.
- Greens: Arugula, watercress and spinach are all good choices here.
- Salt And Pepper: A dash of salt and pepper makes all the other flavors pop.
How To Make Panera’s Mediterranean Veggie Sandwich
- Spread the hummus on both sides of the bread and sprinkle with vegan feta. Alternatively, just use hummus and leave the feta off.
- Pile on the roasted red peppers, followed by the cucumbers, greens, tomatoes and red onions.
- Sprinkle generously with salt and pepper.
- Slice your sandwich in half and enjoy!
Serving Suggestions
- This would be a lovely sandwich to pack for a picnic along with a potato salad and lentil chips.
- Serve with waffle fries or even my garlic truffle fries for a more substantial lunch.
- Like it spicy? Add a bit of samba oelek chili paste or a squeeze of Sriracha sauce.
- If you want to pack this veggie sandwich for lunch, store the ingredients separately, and then simply put the sandwich together before you head out the door.
- Add a drizzle of pesto salad dressing.
- Avocado spread would be delightful on this sandwich!
