Ingredients & Substitutions
- Duke’s Mayonnaise: From everything I read, the base of their signature sauce is what’s called a “heavy mayo” and to me, there is no thicker, better mayo than DUKES!
- Ketchup: Since this is a copycat recipe, there is no real sub for ketchup – otherwise it will taste nothing like the original. Don’t use a light mayo like miracle whip or nonfat greek yogurt – it just isn’t the same in this creamy sauce!
- Worcestershire Sauce: Same goes with this ingredient but if you had to swap it out, i guess you could try soy sauce.
- Creole Seasoning: Even though we’ll never know the real thing, my copycat cane’s sauce is soooo close! And I think it’s because of the creole seasoning. It’s got so much flavor and really adds depth and zest to the recipe. It’s the perfect balance to the other components in this homemade sauce.
- Garlic Powder: You could also use garlic salt if you have that, just don’t add extra salt at the end.
- Kosher Salt: You could use sea salt but use it sparingly so it doesn’t over power this homemade recipe.
- Fresh Cracked Black pepper: We’re talkin’ big chunks of fresh cracked black pepper to give us that texture and spice! You can use regular pepper but it just won’t have the same feel.
- Optional Additions: A lot of people love to add lemon juice to their cane’s sauce recipe but from my source, it’s not in the original recipe. But if you like a tangy sauce, go for it! Hot sauce is another one, but if you’re using a creole seasoning (like tony chachere or this one I have pictured that I got in NOLA), it has enough spice to cover that.

Season with Salt & Pepper: Now give this delicious cane’s sauce a taste and add a pinch of salt and a few cranks of fresh cracked pepper.
Let it Sit: Here’s the hardest part of making this raising canes sauce recipe – LET THE SAUCE REST!!! It needs to sit overnight for all the flavors to really come together.
Serve: Serve it with my crispy parmesan crusted brussels sprouts, some fried chicken, Texas toast, crinkle-cut fries and chicken nuggets.
Save: You can place any leftovers of this yummy sauce in an airtight container and keep it in the fridge for up to a week.
