If you are looking for the perfectly addictive, treat for your next Holiday, then this is it! Sweet, crunchy and amazingly simple to make…we call it Christmas Crack.
You know those desserts that you can make “healthy” by changing a few ingredients, here or there? Well, this isn’t one of them!This is simply, the most addictive holiday (or party food) treat I’ve ever made.
And although healthy, it is NOT, it IS, free from Dairy, Eggs or Nuts which means my little can eat it without worry. So food allergies trump healthy any day.

It can also be Gluten-free if you sub out the Golden Grahams for something like Van’s Cinnamon Heaven cereal.
Here’s what you need to make Magic happen:
- Rice Chex
- Golden Grahams OR Van’s Cinnamon Heaven which is GF.
- Unsweetened Shredded Coconut
- Butter (Earth Balance makes the BEST allergy-friendly butter there is)
- Sugar
- Corn Syrup (Brown Rice Syrup just may do the trick, and make it a tad but “healthier”, but I haven’t tried it yet)

Now that you have all the ingredients, you just have to be able to Mix, Melt & Pour.
Mix the cereals and coconut.
Melt the butter and sugars until it reaches 230 degrees on a candy thermometer (or until it reaches the “soft ball” stage).

Pour the melted sugar over the cereal and mix again to coat.
Usually, it doesn’t stick around very long after this. But if you can manage to get it into an airtight container before some little fingers start grabbing at it (OR before you start nibbling away) there may actually be a chance your party guests will be able to enjoy a taste of this as well. They will also enjoy this Old Fashioned Christmas Bark from Vegetarian Mamma, just use DF chocolate & butter if needed.
But I warn you ahead of time, this is TOTALLY addictive, hence it’s name. However, you could also go with Sugar Rush…..you’ll know why after your kids eat a few handfuls full.
Tips & Tricks:
- Makes 2 large pans and you’ll still have some left. You can easily cut this in half.
- I divided the mix into the pans and THEN poured the syrup mix on top of it and mixed it in. It may be easier to make sure it was evenly distributed that way, so you can do whichever works best with the bowls you have.
