This copycat Panera Mediterranean Veggie Sandwich recipe is a simple 10 minute sandwich that you can make at home! Layered with hummus and fresh veggies! So easy, and satisfying!

Whenever I’m out at Panera Bread with my family, I always order the same thing! Half of the Mediterranean Veggie Sandwich, and a bowl of the black bean soup. The layers of veggies accompanied with hummus is a wonderful combination of flavors and textures. Sometimes it’s so good, I go for the whole sandwich.

So, it’s no wonder that when I’m in the mood for a sandwich at home, I frequently recreate this simple and satisfying meal.

The veggie sandwich from the chain restaurant Panera is not vegan because it includes feta cheese crumbles, and the tomato basil bread uses honey in the recipe.

When I order it, I just ask them to leave off the feta, and I request they put the sandwich on their sourdough bread. For this recipe, I used a tofu feta, and whole wheat bread to make it vegan friendly.

You can either use regular feta, if you’re not vegan, give the tofu feta a try, or simply leave it off.

I really like the flavor of the tofu feta because it gives a nice salty brininess to the sandwich that compliments the creamy hummus and vegetables.

  • Whole Grain Bread: The Panera version of this sandwich comes on tomato basil bread. Unfortunately, unless you go to Panera, it’s difficult to find this type of bread on store shelves. Plus it’s more nutritious and vegan friendly to use a whole wheat sandwich bread. Dave’s Bread is my favorite! You can find it at your local supermarket.
  • Hummus: You can use store bought or make your own homemade hummus using a food processor. If you’d like to change up the flavor. Feel free to use a cilantro jalapeño hummus such or a roasted red pepper variety.
  • Arugula: Panera calls their lettuce emerald greens. I like using arugula. This leafy green is a bit peppery with a hint of lemon flavor.
  • Sliced Tomato: You may use a beefsteak or Roma tomato. Really any tomato that’s in season will work just fine!
  • Mini Cucumber: I like to use mini cucumbers for this recipe. Slice them thinly lengthwise and they are the perfect fit.
  • Roasted Red Peppers: I find my roasted red peppers at Trader Joe’s. They are in the jarred section of the store. They add a bit of sweetness to this sandwich recipe. Panera’s recipe calls for peppadew peppers, but roasted red peppers do the trick!
  • Tofu Feta or Regular Feta: Tofu feta is something you’ll have to make at home. You can’t find it in grocery stores, but it’s super simple. It takes about 15 minutes, and requires pantry ingredients.
  • Red Onion: Thinly slice and layer just as much as you prefer, or leave off all together if you are not an onion lover!

Step by Step Instructions

Step 1: Thinly slice your tomato, cucumber, red onion, and roasted red pepper. Set aside.

Step 2: Spread the hummus on one slice of bread. Sprinkle with tofu feta. Top with sliced red onion, roasted red pepper, cucumber, and tomato. Top with arugula.

Step 3: Place the second bread slice on top of the arugula. Cut in half, and enjoy!

Expert Tips for Making the Best Sandwich

  • If you’d like the flavor of the tomato basil bread from Panera, use a tomato basil flatbread and roll all of the ingredients inside to create a wrap sandwich.
  • Don’t stuff your sandwich too full! When you take a bit all of your ingredients will fall out.
  • Thinly slice the tomatoes, cucumber, and onions for an even bite!
